At our beautiful farmhouse in the Ozarks,

we offer cooking classes with a focus on simple elegance and local ingredients.

We feature meat, honey, dairy, herb, fruit & vegetable raised right here on our own farm…

Seed to Spoon.

For products we must outsource, we strive to choose organic, local and ethical. 

 

Each event is customized so that you can explore

the culinary topics of greatest interest to your group.

We curate every detail to ensure it will be relaxing, conversational and informative. 

Guests with every level of kitchen skill will learn practical tips

and hands-on techniques to use at home. 

The finale of each session will be relaxing around a beautifully appointed table,

 savoring your delicious creations with the others who prepared it.

$40 per person 3 hour daytime class Age 14+ 

Available Monday-Friday Start times offered 10am-3pm
 

Wine & Dine

$50 per person 3 hour evening class Age 21+

Available Monday-Saturday Start times offered 3pm-6pm

(limited Saturday dates available, additional fee of $10 per person applies)

 

Class Size

6-12 people

You are welcome to choose any menu

All ingredients, aprons and utensils are supplied

Gratuity is not included, but appreciated if you feel your experience is exceptional

 

Example Timeline

5pm- Stroll our farm and gardens with a glass of wine 

5:30- Learn as you prepare your meal

7:30- Dine on your delicious class creation complete with wine, tea & coffee

 

Target Audience

Age 14 & up

Classes are geared towards adults, but young adults may enjoy them.

 

Alcohol

We are only able to offer each guest one glass of complimentary wine,

as we do not have a liquor license.

You are welcome to bring your own wine.

Please let us know if you prefer for us to not offer wine to your group.

We can do this by planning ahead.

Class Menus & Descriptions

A Night in Paris 
This class is designed as a Date Night for your couple-friends. Cooking together can be lots of fun with a few tricks for choosing a menu, scheduling, task sharing, creating ambiance and keeping the mood light. We’ll employ the culinary practice of Mise en Place to simplify the process.

Our menu is Prosciutto Melon Brochettes, White Wine Coq au Vin, Gratin Potato Stacks and Fresh Berry Cream Puffs.

French Bistro
Embrace the comforting fare and casual elegance of a little Bistro right here in the heartland. We’ll explore time-tested french cooking techniques and learn how a well planned baker’s schedule can make your kitchen time less stressful. Our menu will be Baked Brie en Croute with Fire Roasted Tomatoes, Creamy Chicken Tarragon, Roasted Ratatouille, and Apple Tarte Tatin.

Sweet & Savory Crepes
Discover the art of making this much loved French staple. The versatile crepe is ideal as breakfast, snack, or dessert! In this class, students will learn how to prepare the batter and cook the perfect crepes. Students will also create several different sweet and savory fillings to complement the delicate and delicious crepes, such as Bacon, Caramelized Onion, Sauteed Mushroom, Fruit Compote, Diced Fresh Herbs, Chocolate, and Whipped Cream.

Fresh Pasta Italian Meatball Dinner
Learn the skills to create a completely hand-crafted meal of Freshly Rolled Organic Pasta and a Hearty Marinara Sauce with Local Pastured Beef Meatballs. We’ll also have plenty of our Fresh Rustic Bread for scarpetta. And finish out the evening with a Frozen Digestif.

A Tuscan Evening of Formaggio Fresco
Our milk cow isn’t currently producing, but we’re happy to source fresh local milk to share the art of “fresh cheese” a.k.a. Formaggio Fresco. We’ll make Mozzarella & Ricotta from scratch with traditional Italian methods.

Our menu will be Crostini with Fresh Herb Ricotta, Fresh Mozzarella Flag Salad, Broiled Lemon-Rosemary Salmon, and Tiramisu.

A Taste of India
Traditional Indian cuisine is meant to be eaten socially, in groups, until everyone is fully satisfied. We will touch on the 5000 year history of its diverse medley of flavors and textures. Come explore this wonderful layering of herbs and spices as we prepare a full Indian meal of Tikka Masala, Naan, Saag Paneer and Mango Lassies

Handcrafted Sushi Rolls
Learn the tips, tricks and secrets to prepare sushi rolls right in your own kitchen. Discover how to prepare sushi rice, achieving a delectable sticky texture. We’ll begin the evening with Matcha Japanese Green Tea sweetened with our own Honey, alongside an appetizer of Sea Salt Edamame with Lemon & Soy Sauce. Then we’ll explore the art of assembling such classics as Spicy Tuna Roll, Salmon Roll, and California Roll featuring local Cucumber & Ginger

Sourdough Bread
Bake the perfect loaf of sourdough bread at home. Learn to create a baker’s schedule, choose flours/grains, customize proofing times & adjust dough hydration. Explore many facets of baking without commercial yeast & maintaining a starter (without it taking over your life). Nutritional benefits of sourdough will be highlighted & you’ll take a starter home.

Sprouting, Fermenting & Culturing
Optimizing nutrition is a passion of ours here at Schofield Acres. Learn to enhance nutritional benefits & make food more digestible by incorporating these methods into your own kitchen. We’ll make Broccoli Sprout Pesto on Sprouted Long-fermented Sourdough, Pea Shoot Salad with Crispy Sprouted Spelt Chicken & Cultured Buttermilk Dressing, and Sprouted Spelt Ginger Molasses Cookies

Happy Hosting Hacks
Being a guest at your own party may seem elusive, but with a few tricks up your sleeve you’ll be cool as the cucumber on your tapas bar. Learn to plan ahead, right down to creating a menu and prep schedule. We’ll discuss guest experience, traffic flow of your entertaining space, and crafting an elegant, relaxed ambiance. Our menu will be Spinach Artichoke Pom Frites, Chicken Cordon Bleu Tarte, Stuffed Mushrooms, and Vanilla Mint Cupcakes

Cast-Iron Cooking
Of course it’s amazing! Most people have a beloved cast-iron pan or two, but it’s so tricky to commit to the cast-iron lifestyle. How in the world do you season, clean, store & maintain the beasts? We’ll cover all of that while making Shrimp Scampi, Sauteed Green Beans, Parmesan Garlic Bread and Texas Chocolate Sheet Cake exclusively with cast iron. We’ll even teach you how to fry an egg without it sticking

 

Curating Your Charcuterie & Your Kitchen
Every kitchen task is more pleasant & less complicated when our space is well curated. We’ll explore tools, organization, lighting, aesthetic, and  workflow. Discover lovely ways to organize the pantry and refrigerator with quick, healthy snacks for your family. Each concept will be put into practice while we create a scrumptious Charcuterie Board & a Fresh Loaf of Sourdough

 

Grain-Free Baking: Nuts, Seeds & Flours, Oh My {Brownies}
For those pursuing a low-carb lifestyle, baked goods may seem elusive.  Low-carb flours and sweeteners tend to be pricier as well as more complex to use. Learning the science behind baking with these unique ingredients is key to preserving your sanity and your budget. We will explore techniques for producing exceptional texture and taste while baking a batch of top-notch Grain Free Brownies. And while those are in the oven, we’ll have a Farm-fresh Salad with Grilled Chicken
