Farm-to-Table cooking classes are held in our beautiful farmhouse in the Ozarks.

Featuring meat, honey, dairy, herbs, fruit & vegetables that are raised right here on our own farm. Each event is customized so you can explore the culinary topics of greatest interest to your group.

We curate every detail to ensure it will be relaxing, conversational & informative.

Guests learn practical tips & hands-on techniques to use at home.

The finale of each session will be savoring your delicious creations at a candlelit table.

Class Offerings

Charcuterie & Curating Your Kitchen

Every kitchen task is more pleasant & less complicated when our space is well curated. We’ll explore tools, organization, lighting, aesthetic & workflow. Discover lovely ways to organize the pantry & refrigerator with quick, healthy snacks for your family. Each concept will be put into practice while we create a scrumptious Charcuterie Board.

 

3-Course French Meal featuring Coq au Vin

Cooking together can be lots of fun with a few tricks for choosing a menu, scheduling, task sharing, creating ambiance and keeping the mood light. Our menu is Prosciutto Melon Brochettes, White Wine Coq au Vin, Gratin Potato Stacks & Fresh Strawberry Cream Puffs

 

Handmade Italian Dinner {Pasta Puttanesca}

Learn the skills to create a completely handcrafted meal of freshly rolled organic pasta & a hearty tomato sauce with a little kick. We’ll also have plenty of our fresh rustic bread for Scarpetta. And finish out the evening with a frozen digestif.

 

Seed to Slice {Sprouted Sourdough Bread}

We will explore each of the stages & steps of sourcing, sprouting, dehydrating, milling, mixing, proofing & baking the perfect loaf of sourdough bread in your home kitchen. Learn to create a baker’s schedule, choose flours/grains, customize proofing times, adjust dough hydration & regulate the baking humidity. We'll explore the many facets of baking without yeast, and maintaining a starter (without it taking over your life). Nutritional benefits of sourdough will be highlighted & you’ll get your own starter to take home. Enjoy your freshly baked loaf with a charcuterie spread.

 

Semi-soft Cheesemaking {Mozzarella & Ricotta}

You’re welcome to arrive 30 minutes before the class begins if you want to participate or observe milking the cow. The class will be a hands-on demonstration of making 2 types of semi-soft cheese. We will cover milk sourcing, safe temperatures, starter cultures, acidity, handling the curd, storage. We’ll also discuss some great ways to use up all that whey.

 

Grain-Free Baking: Nuts, Seeds & Flours, Oh My {Brownies}

For those pursuing a low-carb lifestyle, baked goods may seem elusive.  Low-carb flours & sweeteners tend to be pricier as well as more complex to use. Learning the science behind baking with these unique ingredients is key to preserving your sanity & your budget. We will explore techniques for producing exceptional texture & taste while baking a batch of top-notch brownies. And while those are in the oven, we’ll have a farm-fresh salad with grilled chicken!

 

Tikka Masala, Naan, Saag Paneer & Mango Lassies

Traditional Indian cuisine is meant to be eaten socially, in groups, until everyone is fully satisfied. We will touch on the 5000 year history of its diverse medley of flavors & textures. Come explore this wonderful layering of herbs and spices as we prepare a full Indian meal.

 

Handcrafted Sushi Rolls

Learn the tips, tricks and secrets to prepare sushi rolls right in your own kitchen. Discover how to properly prepare sushi rice and achieve a delectable texture and stickiness. We’ll begin the evening with Matcha Japanese Green Tea sweetened with our own honey. A light appetizer of Sea Salt Edamame with lemon and soy sauce pairs perfectly with Spicy Tuna Roll, Salmon Roll, California Roll featuring local cucumber & ginger.

 

Sweet & Savory Crepes

Discover the art of making this much loved French staple. The versatile crepe is ideal as breakfast, snack, or dessert! In this class, students will learn how to prepare the batter and cook the perfect crepes. Students will also create several different sweet and savory fillings to complement the delicate and delicious crepes.

 

Coffeehouse at Home

We will explore a variety of methods for making the perfect cup of java. Learn how bean roasts, grinding, extraction pressure, temperature all effect the flavor profile of your coffee. We'll make espresso, cold brew, pour over, french press & even a siphon brewer. You'll have a fine selection of creams, plant milks & syrups to add as well. And to balance out all this caffeine & sugar? A variety of coffeehouse treats will be provided: muffins, egg bites & fresh fruit.

 

Pastry Perfection: Sugar Cookies & Biscuits

Discover the magical relationship of flour & butter. We’ll discuss the basic techniques of laminating, fraisage, & “cutting in” while creating the perfect sugar cookie & biscuit dough. Additionally, you’ll learn a few cookie decorating tips. We'll have a big pot of Irish Stew waiting to accompany your biscuits & cookies!Each student gets 6 cookies, so you'll have some to take home with all of the recipes!

no refunds within 3 days of class, but a credit will be offered 

tickets can be transferred to another participant at no cost
